Vegan chocolate buttermilk cake

Yesterday we had a kids birthday party and I took the opportunity to veganize one of our favorite cake recipes. Usually I'm not the recipe sharing kind of girl but this one is so simple and delicious I cannot resist: if you'd like an cruelty-free chocolate buttermilk cake. Here you go!



Vegan Chocolate "Buttermilk" Cake

Ingredients for the dough:
250g vegan margarine
3EL soy flour stirred with 6 tablespoons of water
3 cups sugar
1 sachet of vanilla sugar
4 cups flour
2 cups soy milk
Juice of 1/2-1 lemon (depending on how sour you want your "buttermilk" to be)
2 tablespoons of baking soda
50g cocoa

Ingredients for the icing:
125g vegan margarine
200g icing sugar
Juice of one lemon

For the dough, first mix the the soy milk with lemon juice and set aside for ten minutes. This is how the "buttermilk" is made. Put the rest of the dry ingredients together and stir in the "buttermilk". Place everything on a oven tray lined with baking paper and bake for twenty minutes at 160 degrees Celsius or 320 degrees Fahrenheit.

Then take out the cake and let it cool slightly.

In the meantime, you can prepare the icing of the cake: Melt the margarine in a saucepan, stir in the icing sugar and the lemon juice. Mix well. Then gently spread on the cake. If you like, you can now decorate the cake with vegan sprinkles.

This is not the healthiest recipe, but still healthier than with real butter and buttermilk, which contains many hormones. The children like it!
On occasion I will make this cake again and then hopefully remember shooting a photo. :-)
